A Pitvar Sörözőt 1995 június 15-én nyitottuk, délután 4 órakor. Kezdetben kísérleti jelleggel készítettünk ételeket, de a felmerülő igények miatt fokozatosan bővítettünk. Először csak az étlapot tettük változatosabbá, 2000 nyarán pedig egy 100 férőhelyes pinceétteremmel a befogadóképességet is növelnünk kellett.
