Szűkebb hazánk – a cívis város a hajdú, a bihari és sárréti területek – hangulatát, ízét próbálom visszahozni. A Flaska kialakításában a Déri Múzeum munkatársai voltak segítségemre, az étlapra pedig gyermekkorom ízei kerültek. Teleki Pál azt írta: „merjünk magyarok lenni” – én ezt a saját szakmámban a Flaskával vállaltam. Sőt! Mertem hajdú-bihari lenni!
